200g Sugar
3 tablespoons Cornflour (starch)
1 teaspoon Xanthan Gum
3 teaspoons Rosewater
2 teaspoons Pure Vanilla Extract
2 tablespoons Coarsely Chopped Raw Pistachios
1/2 teaspoon Saffron Threads
Pinch of Salt
Method:
Step 1: Preparation
Pour 125ml of double cream into a freezer-safe container and freeze until solid.
In a small bowl, soak 1/2 teaspoon of saffron threads in a bit of hot water to release their vibrant color and aroma.
Dissolve 3 tablespoons of cornflour in 100ml of milk, stirring until smooth. Set aside.
Step 2: Base Mixture
In a saucepan, combine 375ml of double cream, 650ml of whole milk, 200g of sugar, 2 teaspoons of pure vanilla extract, and a pinch of salt.
Place the pan over medium heat and stir frequently until the mixture reaches a gentle simmer.
Add 1 teaspoon of xanthan gum and stir until completely dissolved.
Step 3: Infusion and Thickening
Once the mixture begins to steam, reduce the heat to low.
Add the saffron threads and 3 teaspoons of rosewater, allowing them to infuse their distinctive flavors into the base.
Slowly incorporate the cornflour and milk mixture into the pan, stirring continuously.
Cook for approximately 5 minutes, or until the mixture thickens to a custard-like consistency. Be careful not to let it boil.
Step 4: Cooling and Chilling
Allow the saffron-infused base to cool to room temperature.
Once cooled, transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions.
Step 5: Final Touch
During the last moments of churning, add 2 tablespoons of coarsely chopped raw pistachios for an added crunch.
Incorporate the frozen double cream into the churning ice cream to create a luscious, smooth texture.
Step 6: Freezing and Serving
Once fully churned, transfer the saffron ice cream to a lidded container and freeze until firm.
